SUPER SALAD DRESSING
INGREDIENTS:
▫️2 medium potatoes
▫️1 zucchini
▫️1/2 cup chickpeas
▫️1/2 tsp paprika
▫️1/2 tsp rosemary
▫️1/2 tsp dried parsley
▫️2 tbs coconut oil
▫️Bunch of goji berries
DRESSING:
▫️1/4 cup Super 7 nut butter
▫️Half a lemon juice
▫️1 tsp maple syrup
▫️1/2 tsp Mustard
▫️2 tbs balsamic vinegar
▫️2-3 tbs hot water
METHOD:
▫️Chop potatoes and zucchini.
▫️First add the potatoes to a bowl and prinklw with coconut oil, paprika and rosemary.
▫️Cook in the oven or Airfryer for 20-30 minutes.
▫️Do the same to the zucchini and chickpeas.
▫️Add to a bowl and sprinkle this time with coconut oil, parsley and salt & pepper.
▫️As the potatoes take more time to cook, you need to add the zucchini and chickpeas to the potatoes half way the cooking.
▫️Whisk together the dressing ingredients.
▫️The hot water will help dissolve the nut butter in a creamy dressing.
▫️Start combining the salad by first adding a bunch of green leaves, then add the roasted veg, then the goji berries and top everything with the dressing.
