ZINGY LIME & PISTACHIO BALLS
INGREDIENTS:
▪️1 cup pistachios
▪️1/2 cup pumpkin seeds
▪️1/2 cup desiccated coconut
▪️1/4 cup coconut cashew butter
▪️10 medjool dates
▪️Lime juice from half a lime
▪️Lime zest from 1 lime
METHOD:
1. In a food processor or blender mix together pistachios, pumpkin seeds and coconut.
2. Add lime juice and zest, coconut cashew butter and dates. Mix until a sticky dough consistency.
3. Shape into balls and roll into coconut.
